These Sheet Pan Beef Quesadillas are the perfect meal for a crowd! Just grab a sheet pan and layer your tortillas with all the fixins’, fold up, bake and slice and serve!
There’s nothing better than a sheet pan meal when you’re expecting a crowd, am I right? We love my Sheet Pan Shrimp Fajitas and my Mahi Mahi Potato and Asparagus Sheet Pan Meal.
And these Sheet Pan Beef Quesadillas are the perfect thing to jazz up your next game day/night or Taco Tuesday.
Why You’ll Love this Recipe
Instead of making individual quesadillas and cooking one by one, you’ll layer your tortillas in a large baking sheet, add your fillings, fold the tortillas over, top with another sheet pan to flatten the quesadillas and bake. Serve with some sour cream, salsa and extra queso and you’ve got a zesty meal that’s guaranteed to fly lickety-split right off your table!
You can customize the recipe to your taste. Not a fan of refried beans, just omit. Like fresh tomatoes and onions instead of going the salsa route, just substitute.
As long as you follow the concept of layering the tortillas in your sheet pan, folding them over your filling and then topping with another sheet pan to keep flat when baking you’re good!
Ingredients You’ll Need
- ground beef
- taco seasoning
- water
- salted butter
- burrito-size flour tortillas
- green chiles
- refried beans
- salsa
- queso
- shredded cheddar jack cheese
Step-By-Step Instructions
The first step is to cook your ground beef in a skillet. When the beef is done browning you’ll drain the grease and then add the taco seasoning and water and cook according to the taco seasoning packet directions. when the meat is done cooking, you’ll remove it from the heat.
Now, it’s time to arrange your tortillas on your sheet pan. You will preheat your oven to 450 degrees and brush your half sheet pan with half of the melted butter and then place the tortillas as pictured below.
You will spread your refried beans on top of the tortillas followed by half of the shredded cheese, the taco meat and the green chiles.
After the green chiles, you will dollop with your salsa, the remainder of the shredded cheese and finally a few dollops of queso.
You will place on the last flour tortilla in the center of the sheet pan and then fold up the remaining tortillas so that your filling is completely covered. Brush the remaining butter over the top of the tortillas and place another sheet pan on top of the tortillas making sure to press down firmly. You’ll bake for roughly 25 minutes until the inside is hot and entirely melted. I gently remove the top sheet pan and continue to bake for 4-5 minutes until the quesadillas are crispy on top.
I use my pizza cutter to slice the quesadillas into squares and I serve with additional salsa, queso and sour cream. These are a great option for Taco Tuesday or for your next game day party!

A Few Cook’s Notes for Sheet Pan Beef Quesadillas
As mentioned above, if you’re not a fan of refried beans you can just omit.
I used shredded cheddar jack cheese, but you can use whatever cheese you prefer.
You will need burrito-size tortillas for this recipe.
