These carrots are delicious as a side or for snacking on throughout the day.
You’re going to absolutely love how the Parmesan on the bottom of the carrots gets super brown and crispy. I couldn’t stop eating these!
Ingredients You’ll Need
- carrots
- olive oil
- garlic cloves
- grated Parmesan cheese
- paprika
- chili powder
- onion powder
- Italian seasoning
- salt
- freshly grated Parmesan cheese
Step-By-Step Instructions
First, you’ll cut your carrots into 3-inch pieces and then you’ll slice those pieces in half lengthwise so each piece has a flat side.
Next up will be to add your olive oil, garlic, the 1/4 cup grated Parmesan, the spices and the salt to a large bowl and then toss in the carrots until well coated.
You’ll place your freshly grated Parmesan in a pie plate or shallow bowl and then dip each carrot flat side down into the cheese. You will need to press the cheese into the carrots firmly so it adheres.
The last step will be to transfer the carrot pieces to your baking sheet (no parchment) cheese side down. You’ll roast for 20-25 minutes until the carrots are tender. Just pierce a few with a fork to test.
I hope you guys give these a try because you won’t be disappointed. They’re delicious dipped in some ranch dressing. Careful because they’re somewhat addictive!
