Hi guys! Since the weather is getting warmer and grilling season is just a few short weeks away (if you haven’t already started), some delicious sides will be needed to go along with those juicy steaks, chicken, burgers and dogs!
I grabbed this recipe for Cheesy Kansas City-Style Corn from America’s Test Kitchen’s One-Hour Comfort cookbook and I’ve already made it a handful of times to rave reviews from friends and family.

Cheesy Kansas City-Style Corn Ingredients
- bacon
- sweet corn
- ham steak
- milk
- cream cheese
- granulated garlic
- salt and pepper
- cayenne pepper
- yellow cheddar
You can fancy things up and serve it with a nice juicy steak or go casual for your summer BBQ’s and serve it with some burgers and hot dogs.
Step-By-Step Instructions
The first step is to sauté your bacon up in a nice large skillet. Then you’ll add your corn shucked right off the cob into your skillet with you ham and spices.
The second step is to add your milk and cream cheese and cook the mixture over medium heat. You’ll break up the cream cheese with a rubber spatula until the mixture is smooth and creamy and starting to bubble around the edges of the skillet, about 8-10 minutes.
The third step is to off the heat and stir in some of your shredded cheddar until it’s melted and then pour the mixture into a broiler-safe baking dish before topping with the remaining cheddar. Once it’s broiled the cheese will be totally melty and brown in spots and utterly dee-lish!
If you can’t grab fresh corn you can always use frozen. A 14-ounce bag will do, but fresh sweet corn is definitely preferable here.

A Few Cook’s Notes for Cheesy Kansas City-Style Corn
The recipe calls for shredded yellow cheddar, but a combination of yellow cheddar and jalapeno jack is also delicious.
When you broil this dish just make sure to keep an eye on the oven. You don’t want it to burn. You just want the cheese melted with a few brown spots.

- 2 slices bacon, cut into 1/2-inch pieces
- 4 ears corn, cut from the cob, about 3 cups total
- 4 oz. ham steak, cut into 1/2-inch cubes
- 1 cup whole milk
- 8 oz. cream cheese,
- 1 tsp. granulated garlic
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/4 tsp. cayenne pepper
- 6 oz. yellow cheddar cheese, shredded and divided
Instructions
- Place oven rack 6 inches from the broiling element and heat broiler.
- Cook bacon in a large skillet over medium heat until crispy, about 5-6 minutes. Right to the skillet, add the corn, ham milk, cream cheese and spices, breaking up the cream cheese with a rubber spatula. Cook, stirring often, until the cream cheese is melted and the mixture starts bubbling around the edges of the skillet, about 8 minutes.
- Turn off the heat and stir in one cup of the shredded cheddar until melted. Transfer the mixture to a broiler-proof baking dish. Top with remaining cheddar. Broil until the cheese on top is melted and spotty brown, about 3 minutes. Keep an eye on the oven so it doesn't burn. Serve immediately.
