These 4th of July Berry Cheesecake Popsicles are a fabulous treat for everyone for the holiday!
Dang! Once again, I’m a day late and a dollar short! But you know what? Who cares?
I know it was Popsicle Week last week, but frankly I enjoy popsicles ALL summer long. And I know I shouldn’t assume (we know how that saying goes), but I’m pretty sure you guys do too! Am I right? I hope so, because these 4th of July Berry Cheesecake Popsicles are da bomb!! They’re going to be my go-to popsicle of Summer 2016!! Can I count you in for a few?? Please say yes!
First of all, aren’t they perfectly festive for your 4th of July shindig? And they’re not only fabulously festive looking, they’re TOTALLY delish! I should know because I ate more than my share! (#sorrynotsorry!)
To celebrate the 4th, of course I needed to whip up something red, white and…well, almost blue! When I was a kid, one of my favorite summer frozen treats was always the Bomb Pop. So this Berry Cheesecake Popsicle is takin’ me right back to my childhood, but no added food coloring and bright blue lips! I could rock the blue lips look when I was a kid, but at my age, not so much.
And with all the delicious strawberries and blueberries flooding the markets right now, it was the perfectly logical AND tastiest choice hands down! I figured, wouldn’t you just love a layered fresh strawberry, creamy vanilla cheesecake and blueberry popsicle to celebrate the 4th of July?! My hands up! How bout yours??
Ingredients
- Strawberry Layer:
- 1/3 cup granulated sugar
- 1/3 cup water
- 1 tsp. freshly squeezed lemon juice
- 2 1/2 cups strawberries hulled and diced
- Cream Cheese Mixture:
- 8 oz. cream cheese room temperature
- 4 Tbsp. granullated sugar
- 1/2 cup half and half
- 1/4 cup heavy cream
- 1 tsp. vanilla extract
- Blueberry Layer:
- 1/3 cup granulated sugar
- 1/3 cup water
- 1 tsp. freshly squeezed lemon juice
- 2 1/2 cups blueberries
Instructions
- Strawberry Layer:
- Combine sugar and water in a small saucepan over medium heat. Bring to a boil and stir until sugar is totally dissolved, about 4 minutes. Remove the pan from the heat and let cool. Place the strawberries and lemon juice in a blender. Add the cooled simple syrup mixture and puree until smooth. Spoon the mixture into the bottom of your popsicle molds, filling mold 1/3 full, about 2 Tbsp. Just eyeball your mold. Freeze until firm.
- Cream Cheese Layer:
- Beat cream cheese with an electric mixture until fluffy, about 2 minutes.
- Slowly add the granulated sugar and beat until combined.
- Add the half and half, heavy cream and vanilla extract and beat until well blended. Add the cream cheese layer on top of the frozen strawberry layer, filling until the mold is 2/3 full. Place in freezer until firm.
- Before you put in the blueberry mixture carfully insert the sticks into the middle of the popsicle.
- Blueberry Layer:
- Combine sugar and water in a small saucepan over medium heat. Bring to a boil and stir until sugar is totally dissolved, about 4 minutes. Remove the pan from the heat and let cool. Place the blueberries and lemon juice in a blender. Add the cooled simple syrup mixture and puree until smooth. Strain the mixture through a fine-mesh strainer into a bowl,. Press with a rubber spatula to extract as much juice as possible. Spoon the mixture into the top of your popsicle molds, filling mold to the top. Freeze until firm.
- To unmold the popsicles, run some hot water over the outsides of the molds, then pull on the sticks to release the popsicles.
- The amount of popsicles you get will depend on the size of your mold. I had a little extra of the cheesecake mixture, so I just froze it and made a cheesecake pop. Delicious on its own too!
