These buttery Chocolate Thumbprint Cookies filled with Peanut Butter are a match made in heaven! So easy to make and absolutely addictive!

So how’s your week going guys?! Happy it’s almost Friday? I thought last weekend blew by, but honestly I think this week cruised by even faster.

This week, I’ve been working on learning the basics of SnapChat. Do you guys do SnapChat? Or should I say “do you snap?” (My son Casey is rolling his eyes right now reading this) Let’s just say any new social media platform freaks me out. The learning curve is huge when you get to be “my age”. Take it from me… I’m too old for half of this crap. First, it was Instagram, then Twitter, then Facebook and now SnapChat. For God’s sake, stop the madness!

Chocolate Peanut Butter Thumbprint Cookies

My friend’s daughter Megan and my son Sean have been helping me get the hang of it. Sean’s says I’m overthinking it. But that’s what I do. Overthink everything. Clearly, the only logical thing to do is disconnect for a bit and grab a few of these Chocolate Peanut Butter Thumbprint Cookies and a nice cup of coffee glass of wine! Care to join me?

Chocolate Peanut Butter Thumbprint Cookies

First of all, thumbprint cookies are like two treats for the price of one. And we all know there’s nothing better than the chocolate peanut butter combo right? These buttery chocolate thumbprints are stuffed with a creamy peanut butter filling that you’ll have a hard time not eating right from the bowl. These are incredibly easy to make and take less than 30 minutes from start to finish. Way easier than learning a new social media platform. And way tastier! Enjoy!

Servings: 18 -20 cookies

Ingredients
  • 1 cup all-purpose flour
  • 1/3 cup natural unsweetened cocoa powder
  • 1/4 tsp. salt
  • 1/2 cup unsalted butter room temperature
  • 2/3 cup granulated sugar
  • 1 egg yolk
  • 3 Tbsp. heavy cream
  • 1 tsp. vanilla extract
  • Peanut Butter Filling:
  • 2 Tbsp. creamy peanut butter
  • 1 Tbsp. unsalted butter softened
  • 3/4 cup confectioner's sugar sifted
  • 2 Tbsp. whole milk
Instructions
  1. Preheat oven to 350 degrees. Line a large baking sheet with parchment paper. Set aside.
  2. In a medium bowl, whisk together flour, cocoa powder and salt. Set Aside.
  3. In the bowl of a stand mixer, cream butter and sugar at medium speed until light and fluffy. Add egg yolk, heavy cream and vanilla and mix until well combined, scraping down the sides of the bowl when necessary.
  4. Gradually add the flour mixture until blended. Shape dough into one-inch balls and place on prepared sheet two inches apart.Press thumb into center of each ball. Bake for 10 minutes, until set.
  5. Let cool for 5 minutes.
  6. While cookies cool, make peanut butter filling.
  7. In a small bowl, beat together peanut butter and butter until smooth. Gradually add the confectioner's sugar alternately with the 2 Tbsp. milk, starting with the sugar and beat until smooth. Spoon the filling into a small ziploc bag. Snip one corner and pipe filling into cooled cookies.

    I am over here laughing so hard Mary Ann! No I do not snap. Err, I don’t do the snap chat. Whatever you want to call it, I don’t do it. Believe it or not, I’m too old for that nonsense too! There are just entirely too many forms of social media if you ask me. And people are WAY too comfortable sharing every detail of their lives on there. Honestly, it gives me anxiety. ;) But i was raised very “old school”. All this talk about social media makes me want cookies! And conveniently you are sharing some amazing ones today!!     I was laughing so hard now Mary Ann. I’m so over all the different social media things we as bloggers need to do. I’m on Snapchat but I haven’t posted in months, it’s just too much. I’ve figured I’d rather focus on one or two SM channels and make them the best I can. These cookies though, damn! They look awesome!!

    I know it’s hard to get the perfect thumbprint cookie, sometimes they crack, sometimes they don’t bake up nice and round ~ it looks like you’ve hit on the perfect formula ~ and who can resist those little peanut butter peaks?? Not me :)

    Mary Ann, I will join you!! but of course! these cookies are so cute! and let me reassure you Mary Ann! you are not alone, I am too old for that crap too!, I deactivated my account, since the only importance of Snapchat was the stories videos, but now you have those in instagram and in facebook, so for me, there is no sense in getting myself crazy for nothing.There are too many social media platforms, I agree with Chey!

    My one piece of advice is to stick to one channel and make it the best you can, then move on to facebook or snapchat. Although, I feel like snapchat is kind of fading away at this point – thanks Instagram stories!

    I say every time those kiddos roll their eyes at you, dock another cookie from their quota. And if they laugh and help you. . .they get an extra cookie. I used to hang out a bit on Snapchat. . .but when Instagram added stories, I abandoned ship. Are people really using both? I get way more views on Instagram stories and I can only tolerate so much social media.

    I’ve come to the conclusion that I don’t have to do it all when it comes to social media… and I can’t, I’ve realized (after plenty of wine!). I’ve not gone there, to Snap that is, but I’ve toyed with IG stories and while it’s fun, it still takes time. Time I don’t have! I’m reprioritizing as I type because I have to. YES to the cookies!     Hi Mary Ann. Dying to try this recipe. Wanted to make them a bit ehalthier. Was wondering if I can replace all purpose flour with whole wheat flour? What will the proportion of the flour be if I use whole wheat?

      I have not tried using whole wheat flour Tania, but I did some research on it. The consensus is you may not want to replace more than 25 perfect of the all-purpose flour with whole wheat flour or you sacrifice the texture of your baked good, making it somewhat dense. I think it may be better when baking breads to substitute, but not so good when making cookies. Hope this helps.
