These Crab Melts are the perfect finger food for your summer parties! Fresh crab and juicy Roma tomatoes atop sourdough toasts with a sprinkle of fresh dill and Gruyère.

Hi guys and Happy Day After Hump Day! One day closer to the weekend! Yesssss!

Any plans? Going to any parties? Perhaps hosting a little shindig yourself? Well, if you are, have I got the appetizer for you! OMGee, you’re going to love these! These Crab Melts were met with rave reviews when I served them to friends last week during our vaca at the beach, so I knew I had to share ASAP. And boy are you going to love how easy they are!

We enjoy seafood all year long, but even more so during the summer because as previously mentioned, we catch most of it ourselves.  For these little Crab Melts we just dropped the old crab trap in the bay and a few hours later we were serving these to company. A little trip to the market for a nice sourdough baguette, some nutty Gruyère cheese, fresh dill and lemon and a few juicy Roma tomatoes from my friend’s garden and it was cocktails and appys on the porch! Just the way summer should be!

Servings: 18 -20 melts

Ingredients
  • 18-20 slices sourdough baguette bread
  • 3/4 cup mayonnaise
  • 3/4 tsp. fresh lemon zest
  • 3 1/2 Tbsp. fresh dill chopped and divided
  • 1 1/2 tsp. Old Bay seasoning
  • 12 oz. lump crabmeat drained
  • 2 Tbsp. red onion finely chopped
  • 1/4 tsp. salt
  • 18-20 Roma tomato slices
  • 1 cup Gruyere cheese shredded
  • salt and freshly ground black pepper
Instructions
  1. Line baking sheet with parchment paper. Set aside.
  2. Preheat broiler. Arrangle slices of sourdough on prepared sheet and broil 1-2 minutes on each side until lightly browned.
  3. In a small bowl, whisk mayo, lemon zest, 3 Tbsp. dill and Old Bay seasoning.
  4. In medium bowl, mix together crabmeat, red onion and salt. Add 2 Tbsp. of the mayo mixture to the crabmeat mixture until well combined.
  5. Spread the remainder of the mayo mixture onto the toasts and top each slice evenly with the crabmeat mixture.
  6. Top each toast with a slice of tomato and sprinkle with cheese.
  7. Broil for 3 minutes or until cheese melts. Remove from oven and sprinkle with salt and freshly ground pepper and the remaining dill.
  8. Serve immediately.

    This weekend? Funny thing…we have, like, 3 turkeys in our freezer. Seriously, don’t know how that happened, so we are going to cook one up and use it for whatever. Not sure yet. I know it’s not a typical thing to cook in the Summer with all the hot weather and stuff, but I really do love turkey and the smell that permeates through the house when it cooks, so figured why not? Other than that, a bit of work, a bit of relaxing, that kind of thing :)

      Thanks Dawn! Funny you should mention cooking up a turkey because believe it or not, I made one last week when Tom and I were on vacation! For some strange reason when August rolls around and everyone starts talking fall, I start thinking turkey! Ha! It was delicious! We enjoyed it for dinner and then had sandwiches for days!     Love crab so much and eat it a lot here in Maryland. I’m always looking for a different way to serve it and this looks delicious! How lucky for you that you get so much fresh seafood. My husband recently went on a fishing trip with my son and came back with snapper. It was by far the best fish I’ve ever had – there’s nothing better than fresh!

      You’ll love these little bites Karen! I have tried lots of fish in my days, but no snapper as of yet! I’ll have to give it a try! Tom went out fishing while we were on vaca and got some awesome mahi mahi! No tuna this trip, so he was a little disappointed, but at least some delicious mahi! I hate when he goes all the way out and gets skunked! Have an awesome weekend! These little melts will be perfect with your yummy strawberry lime gin rickey!

      I’m so glad you agree Cathy! They really are delicious and sooo easy! When I was a kid before my parents bought the house in NB we vacationed on West Point Island. That was where I honed my crabbing talents! Up at 5:30 am every day of vacation reeling in the crabs on that string. So much fun!! Happy weekend!

    Being able to “drop the crab trap in the bay!” ah – I’m so jealous of all your fresh seafood! I can imagine why these got such rave reviews – they look heavenly — totally my kind of appetizer! I’m not sure I’d be able to share it with anyone else :)

    I have zero plans for the weekend, but I’m thinking THESE absolutely NEED to happen! With a few glasses of wine. ;) I am SO jealous you guys catch your own fish and how amazing you caught this crab!! Reminds me of growing up on our boat… I use to sit and watch our traps with my Dad and I would get SOOO excited when we lifted them up to find crabs in there! Anyways, these melts are just PERFECTION! Seriously swooning over here! Pinned! Cheers, dear!

    I am so envious that you get to catch your own seafood!! That sounds like such summertime fun! (Although I am sure it is also hard work. :) ) Such a great way to use the crab as well as show off those summer tomatoes. If I can get my hands on some good crab meat, I’m going to give this one a try!

    Made these with leftover King Crab. :)

    Loved the lemon zest and tomato additions. I like Old Bay, but think the recipe called for too much. It kind of overwhelmed the crab flavor.
