Ingredients

  • 16 ounces brussels sprouts, ends trimmed, then halved
  • 3 Tbsp. olive oil
  • salt and pepper to taste
  • 2/3 cup honey
  • 3 Tbsp. prepared horseradish
  • 2 Tbsp. coarse-grain mustard
  • 6 slices bacon, diced

Instructions

  • Preheat oven to 425 degrees. Place brussels sprouts on a large baking sheet and drizzle with olive oil. Sprinkle with salt and pepper. Place in oven and bake for 15-20 minutes, or until fork tender.
  • While sprouts are cooking place diced bacon in small skillet and cook over medium heat until crisp. Remove to paper towel lined plate.
  • Whisk together horseradish, honey and mustard in small saucepan. Heat over medium heat for 5-7 minutes until thoroughly heated.
  • Remove brussels sprouts from oven and place in large bowl. Toss sprouts with bacon and the glaze. Serve immediately.

Notes

Everyone's oven is a bit different, so roast your brussels sprouts until they're fork tender. I roasted mine in a 425 degree oven for roughly 20 minutes and they were perfect.
My favorite coarse ground mustard is Inglehoffer's Original Stone Ground Mustard. (Not a paid post. Just wanted to share what I enjoy.)
