Apple Spice Snack Cake
This Apple Spice Snack Cake is the ultimate fall cake! It's made with all the warm and cozy fall spices and double the apple flavor. It's got chunks of sweet tart apple and applesauce for added moisture.

- 1 3/4 cups all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cardamom
- 1/4 tsp. nutmeg
- 1/4 tsp. allspice
- 3/4 cup granulated sugar
- 1/2 cup light brown sugar, firmly packed
- 2 large eggs
- 1/2 cup vegetable oil
- 1 cup applesauce
- 1 tsp. vanilla extract
- 2 Granny Smith apples, peeled, cored and chopped into 1/4-inch pieces
- 1/2 cup finely chopped pecans
Preheat oven to 350 degrees F. Spray a 9-inch square baking pan with nonstick baking spray. Set aside.
In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, cardamom, nutmeg and allspice. Set aisde.
In a medium bowl, whisk together the sugars and eggs until smooth. Add the vegetable oil, applesauce and vanilla extract and whisk until well combined. Add the flour mixture and mix until just combined. Do not overmix. Add in the chopped apples.
Pour the mixture into your prepared baking dish. Sprinkle with the chopped pecans. Bake for 45-50 minutes or until a tester inserted in the center of the cake comes out clean. Let the cake cool on a baking rack.
I use ShopRite Bowl & Basket flour, sugar, spices and applesauce for this cake.
If you prefer walnuts over pecans, you can substitute.
