Ingredients
  • 1 Tbsp. olive oil
  • 1 lb. ground turkey meat
  • 1 Tbsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1/2 tsp. oregano
  • 1/2 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper
  • 1/4 tsp. red pepper flakes
  • 3/4 cup water
  • 1 15.8-oz. can black eyed peas, rinsed and drained
  • 1 11-oz. can corn, drained
  • 1 cup green bell pepper, finely chopped
  • 1/2 cup red onion, finely chopped
  • 1 cup grape tomatoes, quartered
  • 1/3 cup jalapenos, seeded and finely chopped
  • 2 cloves garlic, minced
Vinaigrette Dressing
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp. granulated sugar
  • 1/4 tsp. kosher salt
  • 1/8 tsp. freshly ground black pepper
Instructions
  1. Heat olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking up the meat with a spatula, until no longer pink. Drain fat and return to heat. Add spices and water and mix until well combined. Cook until water evaporates, about 5 minutes. Remove from heat and add cooked meat to a large serving bowl to cool a bit.

  2. To the cooled meat, add the black eyed peas, corn, green pepper, red onion, tomatoes, jalapenos and garlic.

  3. In a small bowl, whisk together the vinaigrette ingredients. Toss the meat/veggie mixture with the dressing until well combined. Serve immediately on a platter or as an appetizer with tortilla chips.
