- 1 8-oz. package cream cheese, softened to room temperature
- 1 cup sour cream
- 2 15-oz. cans refried beans
- 1 4-oz. can chopped green chiles, drained and rinsed
- 1 1-oz. package taco seasoning, about 3 Tbsp.
- 1/2 tsp. coarse kosher salt
- 1/4 tsp. smoked paprika
- 1/4 tsp. chili powder
- 1/4 tsp. onion powder
- 1/8 tsp. cayenne pepper
- 2 cups freshly shredded pepper jack cheese
- 2 cups freshly shredded yellow cheddar cheese
- 1/4 cup sliced scallions
- tortilla chips, for serving
Preheat oven to 350 degrees, Spray a 9x13 baking dish lightly with nonstick cooking spray. Set aside. In a medium bowl, mix together both shredded cheese and set aside.
In a large bowl, mix together your softened cream cheese and sour cream until smooth. Add your refried beans and mix until well combined. Add your chopped green chiles, taco seasoning and additional spices and mix until smooth.
Mix in two cups of your shredded cheese. Pour the mixture into your prepared dish and sprinkle with the remaining cheese. Bake for 25 minutes until the cheese is melted. When you remove it from the oven top it with some sliced scallions. Serve with tortilla chips.
You can make this dip ahead of time and bake the day you are serving. Sometimes I make a few hours ahead of time or even the night before.
The green chiles will give this dip some heat, so when adding the cayenne add as much as you prefer. I made the dip exactly the way it appears in the recipe card and it was perfect.
