Strawberry Drop Biscuits
These Strawberry Drop Biscuits are perfect for all those beautiful summer strawberries. This is an easy biscuit recipe that takes minutes to prepare. These can be enjoyed alongside your morning coffee or topped with some fresh whipped cream for a tasty dessert!

- 2 cups all-purpose flour
- 1 Tbsp. baking powder
- 1/2 tsp. coarse kosher salt
- 1/4 cup light brown sugar, firmly packed
- 2 heaping tsp. lemon zest
- 1/2 cup (one stick) unsalted butter, cut into small cubes
- 3/4 cup sour cream
- 1/3 cup buttermilk
- 1 cup chopped strawberries
- 1 cup confectioners' sugar, optional for glaze
- 2 Tbsp. fresh lemon juice, optional for glaze
Preheat oven to 400 degrees. Line two large baking sheets with parchment paper. Set aside.
In a large bowl, whisk together your flour, baking powder, salt, brown sugar and lemon zest.
Cut in your cold butter cubes until crumbly. Stir in your sour cream, buttermilk and strawberries until the dough comes together.
Drop the dough, 1/4 cup each, onto your baking sheets, spacing 2 inches apart and bake for roughly 14 minutes, rotating the trays halfway through, until the tops are lightly browned.
In a small bowl, whisk together the confectioners' sugar with the fresh lemon juice until smooth. Drizzle the glaze over the warm biscuits.
Feel free to substitute the strawberries with blueberries, raspberries or blackberries.
The glaze is totally optional. These are delicious either with or without.
