Ingredients
  • 2 Tbsp. butter
  • 2 Tbsp. all-purpose flour
  • 1 cup beer, I used Heineken
  • 1/2 cup evaporated milk
  • 2 cups shredded yellow sharp cheddar cheese
  • 2 oz. cream cheese, cubed
  • 1/4 cup crumbled blue cheese, optional
  • 1/2 tsp. Dijon mustard
  • 1/2 tsp. Worcestershire sauce
  • hot pretzel nuggets, veggies, rye or pumpernickel bread, for dipping
Instructions
  1. In a medium saucepan over medium heat, melt butter. Whisk in flour and cook for 1 minute, whisking constantly. Slowly whisk in the beer and evaporated milk. Bring to a simmer and cook, whisking, until mixture is thickened, about 2 minutes.

  2. Lower the heat and add the shredded cheese, 1/2 cup at a time, allowing the cheese to melt before the next addition. Add the cream cheese, blue cheese, if using, mustard and Worcestershire until well combined and heated through. Pour into a serving dish and serve it hot with whatever you choose for dipping.
