This Chopped Greek Salad is super healthy and delicious! Enjoy it for lunch, snacking during the day or meal prep for the week. Just a handful of ingredients and a quick and easy, tasty dressing.

Ingredients

Salad

  • 4 Persian cucumbers, roughly 5-6 inches long each, slices into 1/4 inch rounds and then roughly chopped
  • 1 medium green bell pepper, finely chopped
  • 1/2 cup finely chopped red onion
  • 1 pint grape tomatoes, quartered
  • 1/2 cup pitted Kalamata olives, halved
  • 4 oz. crumbled feta cheese

Dressing

  • 1/4 cup extra virgin olive oil
  • 2 Tbsp. red wine vinegar
  • 1 medium lemon, juiced
  • 2 tsp. honey
  • 1/8 tsp. dried oregano
  • 1/8 tsp. coarse kosher salt
  • 1/8 tsp. pepper

Instructions

Salad

  • Combine all chopped veggies and feta cheese in a large bowl.
  • Toss with desired amount of dressing and serve.

Dressing

  • Combine all dressing ingredients in a small jar. Shake well.

Notes

Persian cucumbers are the smaller cucumbers you'll find in the produce department.
You can buy a brick of feta cheese or you can buy the already crumbled. You'll need 3-4 ounces.
