Easy Cucumber Salad
You can't beat an Easy Cucumber Salad for summer. This salad is loaded with crisp cucumbers, carrots, colorful bell peppers, red onions and fresh dill and it's tossed with a tangy vinaigrette! This mayo-less salad is perfect for your next summer party!

Cucumber Salad
- 1 large English cucumber, thinly sliced
- 1 Tbsp. Kosher salt
- 2 carrots, peeled and then shredded (roughly 1 cup)
- 1/2 red onion, thinly sliced
- 1 small red bell pepper, cut into thin strips
- 1 small orange bell pepper, cut into thin strips
- 1 small green bell pepper, cut into thin strips
- 2 heaping tablespoons fresh dill, chopped
Dressing
- 4 Tbsp. olive oil
- 2 Tbsp. red wine vinegar
- 2 cloves garlic, minced
- 1 1/2 tsp. granulated sugar
- 1/2 tsp. salt
- 1/4 tsp. black pepper
Cucumber Salad
Add the cucumbers to a colander and sprinkle with the kosher salt. Toss. Place the colander on a plate and let the cucumbers sit for 15-20 minutes. Rinse with cold water.
Add the drained cucumbers and remaining salad ingredients to a large serving bowl. Pour the dressing over the salad.
You can use English cucumbers or regular cucumbers for this recipe. I prefer English cucumbers because there are less seeds and they're a smidge sweeter.
I used a combination of red, orange and green bell peppers for this recipe, but use any combination you have on hand.
Definitely use fresh dill for this salad over dried.
