Ingredients

  • 1 20-oz. bag refrigerated cheese tortellini
  • 4 Tbsp. butter
  • 4 Tbsp. all-purpose flour
  • 4 cups whole milk
  • 2 tsp. coarse kosher salt
  • 1/2 tsp. pepper
  • 1 tsp. Italian seasoning
  • 1/4 tsp. red pepper flakes
  • 1 lb. broccoli, cut into very small florets
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded asiago cheese, divided

Instructions

  • Bring a large pot of salted water to a boil. Add the tortellini and cook just shy of al dente according to the package directions. You'll reserve 1/2 cup of the pasta water and then drain the remaining water and set aside.
  • Melt butter in a large deep skillet over medium heat. Once the butter is melted, you'll whisk in your all-purpose flour, and continue to whisk constantly for one minute. At this point you'll slowly add in your milk, whisking until smooth.
Mix in your salt, pepper, Italian seasoning and red pepper flakes and whisk until well combined.
  • Stir in your broccoli florets and minced garlic. You'll cook over medium heat, stirring often for 3-4minutes, then add in 1/2 cup of the shredded asiago cheese and all of your grated Parmesan cheese. Stir in your cooked tortellini and 1/2 cup of the reserved hot pasta water.
  • Top the pasta with the remaining grated asiago cheese and then bake at 375 degrees for about 15-20 until the pasta is bubbly and the cheese on top is melted and lightly browned.
