Ingredients

  • 1 lb. ground chicken
  • 1 tsp. garlic powder
  • 1 tsp. Italian seasoning
  • 1/2 tsp. onion powder
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 6 6-inch flour tortillas
  • 1 Tbsp. olive oil
  • 1/3 cup grated Parmesan cheese
  • 3/4 cup marinara sauce
  • 8 oz. fresh mozzarella cheese
  • 1/4 cup fresh basil leaves, chopped

Instructions

  • Add your ground chicken, garlic powder, Italian seasoning, onion powder, salt and pepper to a large bowl and mix with a rubber spatula until well combined.
  • Evenly distribute the ground chicken mixture to the center of each of your six tortillas amd then press the mixture down flat close to the edges of the tortilla.
  • Add your taco or tacos to your skillet or griddle that's been heated over medium-high heat meat side down and cook for three minutes.
You'll flip the tacos and then top with some of your marinara sauce (about 2 tablespoons on each), a sprinkle of grated Parmesan and two thin slices of your fresh mozzarella. You'll continue to cook for an addtional three minutes until the cheese is melted and the bottom of your tacos is lightly browned. You can cover the tacos with a lid to speed along the cheese melting if you'd like.
  • Once the tacos are done cooking you can sprinkle them with some additional grated Parmesan cheese as well as some of your chopped basil and then serve immediately.

Notes

I just grab an 8-oz. ball of fresh mozzarella and slice it very thin into roughly 12 slices, two per taco.
You can use whatever marinara is your favorite. My son turned us on to Yo Mama's which we love because it has no sugar added and it's lower in sodium than some other brands. This isn't a sponsored post. I'm just sharing what we enjoy.
