Ingredients

  • 2 Tbsp. olive oil
  • 2 Tbsp. unsalted butter
  • 2 large yellow onions, sliced and then quarter the slices (about 5 cups total)
  • 1/2 tsp. coarse kosher salt
  • 1/4 tsp. black pepper
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. fresh thyme leaves
  • 1 8-oz. package cream cheese, room temperature
  • 1/2 cup mayonnaise
  • 1 1/2 cups Gruyere cheese, freshly grated and divided
  • crostini for serving

Instructions

  • Preheat oven to 400 degrees. Spray a one quart baing dish with nonstick baking spray and set aside.
  • In a large deep skillet, melt butter along with your olive oil over medium-low heat. Add onions and cook until caramelized, stirring occasionally, for about 35-40 minutes. Add kosher salt and pepper, fresh thyme leaves and Worcestershire sauce and stir until well combined. Then remove the onions from the heat.
  • Add your softened cream cheese, mayonnaise and one cup of your freshly shredded Gruyère to a large bowl and mix until smooth. Add two thirds of your caramelized onions and mix until well combined before adding the mixture to a one-quart baking dish. Top with the remaining caramelized onions, a spoonful here and there, and then top with the remaining half cup of Gruyère cheese.
Bake at 400 degrees for 20 minutes, until it's bubbly around the edges. Serve with crostini crackers or fresh veggies.

Notes

Always freshly grate your cheese because it melts smooth and it's free from any preservatives and anti-caking agents found in those pre-shredded bags.
This dip can be made ahead of time and baked right before you're ready to enjoy it.
