These Back to School Strawberry Fruit Roll-ups will be the perfect special treat for your child's lunch box this school year! Three ingredients is all you'll need and just five minutes of prep time!

Ingredients
4 1/2cupsstrawberrieschopped
1/2cupgranulated sugar
2Tbsp.fresh lemon juice
Instructions
Preheat oven to 170 degrees. Line two large baking sheets with parchment paper. Set aside.
Puree strawberries, sugar and lemon juice in a blender until smooth. Divide mixture between the two prepared baking sheets and spread with an offset spatula if you have one or a rubber spatula.
Bake for 3-3 1/2 hours or until the mixture is no longer sticky. (mine took 3 1/2 hours) Rotate the trays and turn 180 degrees after 1 1/2 hours. I let mine dry for a few hours before I sliced into strips and wrapped with parchment. Store the fruit roll-ups in an airtight container.
Notes
The amount of sugar you'll need will depend on how sweet your strawberries are. The recipe calls for 1/2 cup, but your can start with a little less if you prefer and taste test to see if you'll need more.
