Chicken Marinade
- 2 lbs. boneless skinless chicken breasts, cut into 1 1/2-inch cubes
- 4 Tbsp. honey
- 3 Tbsp. low-sodium soy sauce
- 2 Tbsp. olive oil
- 2 Tbsp. fresh lime juice
- 1 large jalapeno, seeded and finely chopped
- 2 closes garlic, minced
- 1 tsp. kosher salt
- 1/2 tsp. pepper
Honey Lime Butter
- 4 Tbsp. butter, softened
- 2 tsp. fresh lime juice
- 1 tsp. lime zest
- 1 tsp. honey
- 1/4 tsp. pepper
- 1/4 tsp. paprika
Chicken Marinade
In a small bowl or jar, combine honey, soy sauce, olive oil, lime juice, jalapeno, garlic and salt and pepper and whisk together or shake vigorously until well combined. Add chicken to a large bowl and pour marinade over and toss. Cover bowl with plastic wrap and place in refrigerator for at least one hour to overnight.
Preheat your air fryer according to the manufacturer's directions. While the air fryer is preheating you will add your chicken to your skewers, roughly 5-6 pieces per skewer. Add a few chicken skewers at a time in a single layer to the fryer without overcrowding and cook at 400 degrees for 10-12 minutes or until no longer pink inside or until the chicken has an internal temp of 165 degrees, turning the skewers over at the halfway point. Mine took 10 minutes, so I flip at 5. Remove the skewers when they're done cooking to a large baking sheet and brush generously with the honey lime butter and then serve.
I try to cut my chicken breasts into equal size pieces for even cooking.
If using wooden skewers, soak the skewers in cold water for about 20 minutes before threading on your chicken.
This chicken is perfect for weekly meal prep. I usually make a batch at the beginning of the week and snack on it or enjoy it for lunch added to a salad all week long.
The honey lime butter is a must, so don't skip it. It's super tasty.
