Spicy Black Bean Turkey Chili

Ingredients
  • 2 Tbsp. olive oil
  • 1 medium red pepper chopped
  • 1 medium green pepper chopped
  • 1 medium Vidalia onion chopped
  • 1 lb. lean ground turkey meat
  • 2 garlic cloves minced
  • 1 14 oz.can black beans drained and rinsed
  • 1 28 oz. can crushed tomatoes
  • 1 chipotle pepper in adobo sauce finely chopped, plus 1 extra Tbsp. adobo sauce
  • 1 cup chicken broth
  • 2 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • 1 tsp. dried oregano
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. paprika
  • 1 tsp. kosher salt
  • 1/2 tsp. pepper
Instructions
  1. In a large pot or dutch oven, heat 2 Tbsp. olive oil over medium heat.
  2. Add red pepper, green pepper and onion and cook for 5 minutes until tender.
  3. Add turkey meat and cook until no longer pink.
  4. Add garlic, black beans, crushed tomatoes, chipotle pepper and adobo sauce, chicken broth and spices, and stir to combine.
  5. Bring to a boil.
  6. Reduce heat to low, and simmer for 30 minutes.
