  • 1 1/3 cups all-purpose flour
  • 1 tsp. cream of tartar
  • 1/2 tsp. baking soda
  • pinch of salt
  • 1/2 cup unsalted butter room temperature
  • 1 cup granulated sugar divided
  • 1 egg room temperature
  • 2 tsp. ground cinnamon
  1. Preheat oven to 400 degrees. Line a large baking sheet with parchment paper. Set aside.
  2. In a medium bowl, stir together flour, cream of tartar, baking soda and salt.
  3. In the bowl of a stand mixer, combine butter and 3/4 cup sugar. Beat until light and fluffy, about 4 minutes. Add egg and beat until well combined, scraping down the sides of the bowl as needed. Gradually add flour mixture and mix until combined.
  4. In a small shallow bowl, combine remaining 1/4 cup sugar and cinnamon. Shape dough into 1-1 1/2 inch balls. Dip the balls into the sugar mixture coating thoroughly. Place on prepared sheet 2 inches apart.
  5. Bake 8-10 minutes until golden brown. Cool on sheet then transfer to wire rack.
