White Chocolate Cherry Macadamia Nut Cookies

- 2 cups all-purpose flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 3/4 cup (12 Tbsp.) unsalted butter, room temperature
- 1 1/4 cups light brown sugar, firmly packed
- 1 large egg, room temperature
- 1 tsp. vanilla extract
- 3/4 cup white chocolate chips
- 1/2 cup macadamia nuts, roughly chopped
- 1/2 cup dried cherries, roughly chopped
Preheat oven to 350 degrees. Line two large baking sheets with parchment paper.
In a medium bowl, whisk together flour, baking soda and salt. Set aside.
Beat butter and sugar together until smooth and creamy. Add the egg and vanilla extract and beat until combined. Gradually add the flour mixture with a wooden spoon until combined. Fold in the white chocolate chips, macadamia nuts and dried cherries.
Using a 1 1/2-inch cookie scoop, drop cookie dough onto prepared sheets, 2 inches apart. Bake 11-13 minutes. Remove from oven and cool on wire racks.
As mentioned above, you can omit the nuts if you're allergic. If you'd like, you could substitute some sweetened coconut.
I love to make this cookie dough, scoop it into balls and freeze them on a parchment-lined baking sheet until they're solid and then add them to a Ziploc freezer bag, so when the craving hits I bake one or two. Or ten.
