- 2 cups all-purpose flour
- 1 tsp. baking soda
- 3/4 tsp. ground cinnamon
- 1/2 tsp. salt
- 3/4 cup unsalted butter, room temperature
- 1 1/4 cups light brown sugar, firmly packed
- 1 large egg, room temperature
- 1 tsp. vanilla extract
- 1 cup dried blueberries
In a medium bowl, whisk together flour, baking soda, cinnamon and salt. Set aside.
Preheat oven to 350 degrees. Line two large baking sheets with parchment paper.
Beat butter and sugar together until smooth and creamy. Add the egg and vanilla extract and beat until combined. Gradually add the flour mixture with a wooden spoon until combined. Fold in the blueberries.
Using a 1 1/2-inch cookie scoop, drop cookie dough onto prepared sheets, 2 inches apart. Bake 11-13 minutes. Remove from oven and cool on wire racks.
You can use light brown sugar or dark brown sugar for this recipe.
You can purchase dried blueberries at some food markets, specialty stores, online or at Costco, where I purchased a 20-oz. bag for a great price.
