This Sheet Pan Gnocchi with Italian Sausage Broccoli Rabe Onions and Peppers is perfect for those busy weeknights. It's low on effort and high on flavor!
Preheat oven to 450 degrees. Line a large baking sheet with parchment paper. Set aside.
To a large bowl, add broccoli rabe, yellow pepper, onion, diced tomatoes, gnocchi, garlic, Italian seasoning, salt, pepper, red pepper flakes and olive oil. Toss until everything is well coated. Pour mixture onto prepared baking sheet. Crumble the sausage and place evenly in clumps on top of vegetable/gnocchi mixture. Bake until the sausage is cooked though, about 20 minutes, then turn the oven onto broil and broil for 1-2 minutes, until the top crisps up. Remove from the oven and sprinkle with Parmesan cheese. Serve immediately.
