  • 1 cup unsalted butter, room temperature
  • 2/3 cup granulated sugar
  • 1 large egg, room temperature
  • 1 tsp. vanilla extract
  • 2 1/4 cup all-purpose flour
  • 1 tsp. ground cinnamon
  • 1/2 tsp. cardamom
  • 1/2 tsp. ground ginger
  • 1/2 tsp. salt
  • 1/4 tsp. allspice
  • 1/4 tsp. ground cloves
  1. Preheat oven to 350 degrees. Line 2 large baking sheets with parchment paper or a silicone baking mat.

  2. In the bowl of a stand mixer fitted with a paddle attachment, beat butter and sugar at medium speed until smooth, about 2-3 minutes. Add the egg and the vanilla extract and continue to beat until well combined, scraping down the sides as needed, about 1-2 minutes.

  3. In a medium bowl, whisk together the flour and spices until well combined. Add the flour and mix on low speed until well combined. Add some of the dough to your cookie press and following manufacturer's directions press the cookies about 2 inches apart on prepared sheets. Top with sprinkles and/or colored sugars if desired.

  4. Bake until lightly browned around the edges, about 8-9 minutes. Remove from the oven and let cool for 5 minutes before removing to a wire rack to cool completely. The cookies will keep in an airtight container for one week.
