Ingredients

  • 1 lb. shrimp, cooked and chopped
  • 2 cups cheddar-jack cheese, divided
  • 1 cup mayonnaise
  • 3 scallions, white part and some green, chopped
  • 1/2 cup bacon bits
  • 2 Tbsp. fresh dill, chopped
  • 1 16-oz. can Grands! Refrigerated Sweet Hawaiian Flaky Biscuits, each cut into 4 pieces
  • 4 Tbsp. butter, melted
  • 2 cloves garlic, minced
  • 1 tsp. Dijon mustard

Instructions

  • Arrange a rack in the middle of the oven. Preheat oven to 400 degrees.
  • In a large bowl, combine the shrimp, 1 1/2 cups of the shredded cheddar-jack, mayo, scallions, bacon and dill.
  • In a small bowl, mix the melted butter, garlic and mustard until well combined. Dip the biscuits pieces, a few at a time, in the melted butter mixture until well coated. Scatter half of the coated biscuits in the bottom of a large skillet. Drop dollops of the shrimp mixture, about half, on top of the biscuits. Top with the remaining biscuits and then the remaining shrimp mixture. Sprinkle with the remaining shredded cheese.
  • Bake for 35-40 minutes, tenting with a piece of foil if biscuits start to brown too much. Remove from oven and serve immediately.
