Cranberry Orange Streusel Bars

A combination of sweet and tart, these Cranberry Orange Streusel Bars are a delicious fall dessert or breakfast treat!

Ingredients

Cranberry Orange Filling

  • 4 cups whole fresh cranberries
  • 1 cup granulated sugar
  • 1 Tbsp. cornstarch
  • 1/4 cup orange juice
  • 1 Tbsp. freshly grated orange zest
  • 1 tsp. vanilla extract

Crust and Topping

  • 1 cup Bob's Red Mill Old-Fashioned Oats
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, firmly packed
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1 cup (two sticks) cold unsalted butter, cut into small cubes
  • 1 large egg
  • 1 tsp. vanilla extract

Instructions

Cranberry Orange Filling

  • Combine all filling ingredients in a medium saucepan over medium-high heat. Mix until well and bring to a boil. Once the mixture comes to a boil, reduce heat to low and cook for 4-5 minutes until slightly thickened, stirring constantly. Remove from heat and set aside to cool.

Crust and Topping

  • Preheat oven to 350 degrees. Line a 9X9 pan with parchment paper. Set aside.
  • Place oats in food processor and pulse 8 times. 
  • In a large bowl, combine oats, flour, sugars, baking powder, cinnamon and salt. Whisk together. Add butter. Cut in with pastry cutter until mixture resembles coarse crumbs.
  • In a small bowl, lightly beat egg and vanilla. Add to oat mixture and mix together using your fingers until the dough begins to clump together
  • Tightly press 2/3 of the mixture into the bottom of your prepared pan. Spread cranberry orange filling over crust to 1/2 inch of outer edges. Top with remaining crumb mixture. Bake for 40-45 minutes, until lightly browned on top. Remove from oven and cool on wire rack for 30 minutes, then place in refrigerator to cool totally. Cut into squares and serve plain or with ice cream or fresh whipped cream if desired.
