Back to School Strawberry Fruit Roll-Ups

  • 4 1/2 cups strawberries chopped
  • 1/2 cup granulated sugar
  • 2 Tbsp. fresh lemon juice
  1. Preheat oven to 170 degrees,
  2. Line two large baking sheets with parchment paper. Set aside.
  3. Puree strawberries, sugar and lemon juice in a blender until smooth.
  4. Divide mixture between the two prepared baking sheets and spread with an offset spatula if you have one or a rubber spatula.
  5. Bake for 3-3 1/2 hours or until the mixture is no longer sticky. (mine took 3 1/2 hours) Rotate the trays and turn 180 degrees after 1 1/2 hours.
  6. I let mine dry for a few hours before I sliced into strips and wrapped with parchment.
  7. Store the fruit roll-ups in an airtight container.
