Ingredients

  • 2 Tbsp. olive oil
  • 1 medium red pepper, chopped
  • 1 medium green pepper, chopped
  • 1 medium Vidalia onion, chopped
  • 1 lb. lean ground turkey meat
  • 2 garlic cloves, minced
  • 1 14-oz. can black beans, drained and rinsed
  • 1 28-oz. can crushed tomatoes
  • 1 chipotle pepper in adobo sauce, finely chopped, plus 1 extra Tbsp. adobo sauce
  • 1 cup low-sodium chicken broth
  • 2 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • 1 tsp. dried oregano
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. paprika
  • 1 tsp. kosher salt
  • 1/2 tsp. pepper

Instructions

  • In a large pot or dutch oven, heat 2 Tbsp. olive oil over medium heat.
  • Add red pepper, green pepper and onion and cook for 5 minutes until tender.
  • Add turkey meat and cook until no longer pink.
  • Add garlic, black beans, crushed tomatoes, chipotle pepper and adobo sauce, chicken broth and spices, and stir to combine.
  • Bring to a boil.
  • Reduce heat to low, and simmer for 30 minutes.

Notes

I added one whole chipotle pepper plus one tablespoon of the adobo sauce which I think gives it a nice amount of heat. You can adjust to your own preference.
The ground cinnamon gives this chili great flavor. Don't worry, it's not overpowering.
I used ground turkey to keep this chili a bit healthier, but you can also use ground beef.
