Loaded Muesli Quick Bread

Ingredients

  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup canola oil
  • 3/4 cup applesauce
  • 2 tsp. vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tsp. ground cinnamon
  • 1/2 tsp. cardamon
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 cup Bob's Red Mill Fruit and Seed Muesli separated
  • 1/2 cup dried apricots chopped
  • 1/2 cup dried blueberries

Instructions

  • Preheat oven to 350 degrees. Lightly grease an 8 1/2" x 4 1/2" loaf pan.
  • In a large bowl, combine sugar, eggs, canola oil, applesauce, and vanilla extract until well blended.
  • In a separate bowl, whisk together flour, cinnamon, cardamon, baking powder, baking soda and salt. Add dry ingredients to wet ingredients until just combined. Gently mix in 1/2 cup of the Bob's Fruit and Seed Muesli, chopped apricots and dried blueberries.
  • Pour the batter into the prepared pan. Sprinkle with the remaining 1/4 cup muesli. Bake for 55-60 minutes or until a toothpick inserted in the center of the loaf comes out clean. Remove from oven and cool in pan for 10 minutes, then remove from pan and let cool completely.
