Maple Pecan Snowball Cookies
These Maple Pecan Snowball Cookies are melt-in-your-mouth delicious! They're round cookies dipped in confectioners' sugar that look just like little snowballs, hence the name, and they're always a hit for the holidays!

- 2 cups all-purpose flour
- 1 cup pecan halves, super finely chopped
- 1 tsp. ground cinnamon
- 1/4 tsp. salt
- 1 cup (two sticks) unsalted butter, softened
- 1 cup confectioners' sugar, divided
- 1 tsp. vanilla extract
- 1 tsp. maple extract
Preheat oven to 325 degrees. Line a large baking sheet with parchment paper. Set aside.
In a medium bowl, whisk together flour, finely chopped pecans, cinnamon and salt. Set aside.
In a stand mixer fitted with a paddle attachment or with a hand electric mixer, beat butter, 1/2 cup confectioners' sugar, vanilla and maple extracts until smooth. Gradually add the flour mixture until fully incorporated. Roll the dough into walnut sized balls and place two inches apart on prepared sheet.
Bake until the cookies are just lightly browned on the bottom, about 15-17 minutes. Let the cookies cool for 2-3 minutes before moving to a wire rack. Place the remaining 1/2 cup confectioners' sugar in a small bowl and roll the warm cookies in the sugar to fully coat before transferring back to the wire rack to fully cool.
