Fluffernutter Bars

These Fluffernutter Bars are totally irresistible and PERFECT for all the peanut butter and Fluff sandwich lovers out there! Grab one with a tall glass of cold milk and you'll be in heaven!

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup creamy peanut butter
  • 1 cup light brown sugar
  • 1 large egg, room temperature
  • 1 tsp. vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp. kosher salt
  • 1 cup marshmallow Fluff
  • 6-8 Nutter Butter Cookie Sandwiches

Instructions

  • Preheat oven to 350 degrees. Line an 8x8 baking pan with parchment paper. Spray parchment lightly with nonstick cooking spray. Set aside.
  • In a large bowl, cream together butter and peanut butter until smooth, 1-2 minutes. Add the brown sugar and continue to mix until smooth.
  • Add the egg and vanilla and mix until well combined. Add the flour and kosher salt and mix until just combined and no streaks of flour remain.
  • Add half of the cookie dough to your prepared pan and smooth out with an offset or rubber spatula. Top the dough with a layer of the marshmallow Fluff and then dollop the remaining cookie dough on top of the Fluff, smoothing gently with your spatula. I find spraying the spatula with some nonstick cooking spray makes it easier to spread evenly. Lightly press a few Nutter Butter Cookies into the top. (as pictured)
  • Bake for 25-30 minutes, until lightly browned on top. Mine took 30 minutes. Remove to a wire rack to cool. Once cool, cut into bars.

Notes

As with any cookie bar recipes, I make sure not to overbake. I like my bars moist and chewy, not dry and hard. I baked these for 25-30 minutes or until a tester inserted in the middle of the bars came out mostly clean with just a few crumbs.
You will need an 8x8 pan for this recipe.
I used the full sized Nutter Butter Cookies (as pictured) to top my bars with, but you could also use their Nutter Butter Bites if you'd like.
