Ingredients

  • 2 slices bacon, cut into 1/2-inch pieces
  • 4 ears corn, cut from the cob, about 3 cups total
  • 4 oz. ham steak, cut into 1/2-inch cubes
  • 1 cup whole milk
  • 8 oz. cream cheese,
  • 1 tsp. granulated garlic
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. cayenne pepper
  • 6 oz. yellow cheddar cheese, shredded and divided

Instructions

  • Place oven rack 6 inches from the broiling element and heat broiler.
  • Cook bacon in a large skillet over medium heat until crispy, about 5-6 minutes. Right to the skillet, add the corn, ham milk, cream cheese and spices, breaking up the cream cheese with a rubber spatula. Cook, stirring often, until the cream cheese is melted and the mixture starts bubbling around the edges of the skillet, about 8 minutes.
  • Turn off the heat and stir in one cup of the shredded cheddar until melted. Transfer the mixture to a broiler-proof baking dish. Top with remaining cheddar. Broil until the cheese on top is melted and spotty brown, about 3 minutes. Keep an eye on the oven so it doesn't burn. Serve immediately.

Notes

The recipe calls for shredded yellow cheddar, but a combination of yellow cheddar and jalapeno jack is also delicious.
When you broil this dish just make sure to keep an eye on the oven. You don't want it to burn. You just want the cheese melted with a few brown spots.
