Bacon Pimento Cheese Bites

These Bacon Pimento Cheese Bites may be mini, but they're huge on flavor! Flaky phyllo tart shells filled with classic Southern pimento cheese and topped with crispy bacon are just perfect for all your fall game day festivities!

Ingredients

  • 1 cup sharp white cheddar cheese, finely grated
  • 1 cup sharp yellow cheddar cheese, finely grated
  • 1/3 cup diced pimentos, drained
  • 1/4 cup mayonaise
  • 1/2 tsp. celery salt
  • 1/4 tsp. cayenne pepper
  • 2 1.9-oz. packages (30 shells total) Phyllo shells, I use Athens
  • 1/2 cup crisp bacon, finely chopped

Instructions

  • Preheat oven to 350 degrees. Line a large baking sheet with parchment paper. Set aside. In a medium bowl, combine both cheeses, pimentos, mayo, celery salt and cayenne until well combined.
  • Place shells on prepared sheet. Spoon one heaping teaspoon of pimento cheese into each shell. Refrigerate any remaining cheese in an airtight container. Sprinkle each bite with some of the sprinkled bacon. Bake for 10-12 minutes, or until cheese looks melted and bubbly. Remove from the oven and serve immediately.

Notes

I used two boxes of Athens Phyllo Shells for this recipe. The recipe makes 30 little bites.
I used a heaping teaspoonful of pimento cheese in each of my shells. You may have extra pimento cheese, so just store it in the fridge in an airtight container.
You can fry your own bacon or use store-bought fresh bacon bits that you can find in the salad dressing aisle of your food market. I sometimes use Hormel bacon bits when I'm feeling lazy.
