Scotcheroos

The weather's heating up folks! That calls for a delicious no-bake dessert! These Scotcheroos hit the spot! They're a classic treat that kids and adults alike can't resist!

Ingredients

  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup peanut butter
  • 6 cups RIce Krispies cereal
  • 1 cup semi-sweet chocolate morsels
  • 1 cup butterscotch chips

Instructions

  • Line a 9x13 pan with parchment paper. Spray the parchment with non-stick cooking spray. Set aside. Place the Rice Krispies in a large bowl. Set aside.
    Add corn syrup and granulated sugar to a medium saucepan and cook over medium heat, stirring frequently, until sugar dissolves. Bring the mixture to a boil. Remove from heat. Quickly stir in the peanut butter. Mix well. Pour the mixture over the Rice Krispies cereal. Stir until well coated. Press the mixture into the prepared pan.
  • Melt the chocolate and butterscotch chips together in a microwave safe bowl in 30-second internvals until smooth. Spread evenly over cereal mixture. Let stand until firm, about 1-2 hours. Sprinkle with Maldon sea salt flakes, if desired. Cut into squares.

Notes

When making scotcheroos it's best to have all your ingredients measured out and ready to go. The peanut butter/sugar/corn syrup mixture can harden up pretty quickly, so it's best to work fast.
The bars will keep in an airtight container for a few days, that is if they last that long.
These are made in a 9x13 pan and I cut mine into roughly 20 squares.
I opted to sprinkle mine with a bit of Maldon sea salt flakes.
