Ingredients

Turkey Meatballs

  • 1 lb. ground turkey
  • 1/2 cup plain panko crumbs
  • 1/3 cup celery, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1 garlic clove, minced
  • 2 Tbsp. milk
  • 1 large egg, lightly beaten
  • 1 Tbsp. dried parsley, plus extra for sprinkling before serving, if desired
  • 1/2 tsp. kosher salt
  • 1/2 tsp. freshly ground black pepper

Sauce

  • 1 cup ranch dressing
  • 6 oz. buffalo wing sauce
  • 2 oz. cream cheese

Instructions

Meatballs

  • Preheat oven to 375 degrees. Line a large baking sheet with parchment paper. Set aside.
In a large bowl, combine all meatball ingredients. Mix well. Divide mixture into 20 meatballs. Place meatballs on prepared sheet and bake for 15-20 minutes, flipping halfway through, until meatballs are cooked through and no longer pink. Internal temperature should be 165 degrees F.

Buffalo Sauce

  • In a large, deep skillet, heat ranch, buffalo wing sauce and cream cheese over medium heat, whisking until smooth. Bring to a boil and then add the cooked meatballs. Reduce temperature and simmer for 10 minutes, spooning sauce over the meatballs. Just before serving, sprinkle with blue cheese crumbles and some parsley, if desired.
