Ingredients
  • 2 lb. ground turkey
  • 2 Tbsp. olive oil
  • 2 cups yellow onion, chopped
  • 2 4-oz. cans chopped green chilies
  • 1 poblano pepper, seeded and chopped
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 Tbsp. ground cumin
  • 2 tsp. kosher salt
  • 1 tsp. chili powder
  • 1 tsp. dried oregano
  • 1/4 tsp. ground cinnamon
  • 2 cloves garlic, minced
  • 5 cups low-sodium chicken broth
  • 2 15.5-oz. cans cannellini beans, drained and rinsed
  • 1 cup Pepper Jack cheese, shredded, plus extra for serving
  • 1 small lime, juiced
Instructions
  1. In a large Dutch oven, over medium-high heat, cook the ground turkey until no longer pink, about 7-8 minutes. Drain and remove to a bowl. Set aside. Clean Dutch oven.

  2. Heat 2 tablespoons olive oil in Dutch oven over medium heat. Add onion, green chiles, poblano pepper, jalapeno pepper, cumin, salt, chili powder, oregano and cinnamon and cook until vegetables are softened, about 5 minutes. Add the garlic and continue to cook for 1 minute.

  3. Increase the heat to high. Add the chicken broth, cannellini beans and turkey meat. Bring to a boil, then reduce the heat to low and simmer for 30 minutes until heated through, stirring often.

  4. Add one cup of the shredded cheese and the lime juice and stir until the cheese is melted and well combined. Serve immediately with tortilla chips and/or cornbread and extra shredded cheese.
