Ingredients
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 lightly packed brown sugar
  • 2 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 1/2 tsp. ground cinnamon
  • 1 egg, lightly beaten
  • 1/4 cup vegetable oil
  • 1/2 cup milk
  • 1 cup blueberries
  • Crumb Topping
  • 1/2 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup unsalted butter, cubed
  • 1 1/4 tsp. ground cinnamon
Instructions
  1. Preheat oven to 400 degrees.

  2. In medium bowl whisk together flour, sugars, baking powder, salt and cinnamon.
  3. In large bowl mix egg, oil and milk together.
  4. Fold the dry mixture into the wet mixture. Gently fold in the blueberries.
  5. Spoon into paper baking cups or lightly sprayed muffin cups.
  6. For the crumb topping:
  7. Place all ingredients for the crumb topping in a medium bowl.
  8. Combine using a pastry blender. Sprinkle over each muffin before baking.
  9. Bake for 18 minutes.
  10. Cool on wire rack.
