Ingredients
  • 1 15.5-oz. can Goya Black-Eyed Peas, drained and rinsed
  • 1 11-oz. can white shoepeg corn, drained
  • 1/2 cup yellow pepper, seeded and small diced
  • 1/2 cup orange pepper, seeded and small diced
  • 1/2 cup grape tomatoes, quartered
  • 1/4 cup pickled jalapenos, finely chopped
  • 3 scallions, finely chopped
  • 2 garlic cloves, minced
  • 2 Tbsp. olive oil
  • 1 Tbsp. red wine vinegar
  • Juice of half a lime
  • 1 tsp. kosher salt
  • 1/4 tsp. pepper
Instructions
  1. Place all ingredients in large bowl and toss to combine. Cover and chill for 2-3 hours. Serve with tortilla chips or as a side.
