- 1 lb baby potatoes
- 1 lb. green beans trimmed
- 4 6-oz. pieces Mahi Mahi fillets
- 4 tsp. Old Bay seasoning divided
- Kosher salt and freshly ground black pepper, to taste
- 1/4 cup olive oil
- juice of one lemon
- 4 slices fresh lemon, for garnish
- 1 Tbsp. fresh chives, finely chopped for garnish
Preheat grill to medium heat. Cut four 18x12 inch sheets of heavy-duty foil. Spray with non-stick cooking spray.
Place potatoes in a microwave safe bowl and microwave uncovered for 4 minutes or until just tender. Remove from microwave and when cool enough to handle, cut into 1/4 inch slices.
Place equal amount of potatoes and beans on center of each sheet of foil.
Place a piece of mahi on each sheet on top of the potatoes and beans.Sprinkle each fillet with one teaspoon Old Bay seasoning and salt and pepper, to taste.
Fold up four sides of the foil.
In a small bowl, whisk together olive oil and lemon juice with 1/2 tsp. salt and 1/2 tsp. pepper.
Drizzle mixture evenly over each packet.
Seal edges of foil tightly, allowing some space for heat circulation. Place on grill. Cover. Cook for 10-12 minutes or until fish is opaque and cooked though.
Serve immediately. Garnish with fresh lemon slice and chopped chives.
