These Baked Buttermilk Blueberry Donuts are a special breakfast treat! Loaded with blueberries and dipped in sugar, they’re easy to make and a family favorite!
It’s Monday morning, and Mondays just call for something special, don’t you think? So today I made us something awesome for breakfast! Donuts. Baked Buttermilk Blueberry Donuts.
Yes, you read that right. I said baked! So technically, since these donuts are baked they are better for you! That means we can eat more than one and not feel as guilty. YAHOO! And what’s even better is they are filled with blueberries! So they’re baked, loaded with blueberries AND taste great!
We all know blueberries have the highest anti-oxidant capacity of all fresh fruit, right? Blueberries are also reported to reduce belly fat, but since I am putting them in a donut I guess we have to scratch that! Oh well, we can’t have it all but we can have donuts! And with my handy-dandy donut pan from Wilton it makes whipping these babies up a piece of cake donut! I added some cinnamon and a tablespoon of lemon zest to give these donuts added flavor and some buttermilk to keep them super moist. You won’t need to run to the donut shop for something special to go with your coffee when you can make these beauties in the comfort of your own home.

Ingredients
- 3 cups all-purpose flour
- 1 3/4 cups granulated sugar divided
- 2 tsp. baking powder
- 1 tsp. baking soda
- 3/4 tsp. ground cinnamon
- 1 Tbsp. grated lemon zest
- 1/2 cup one stick butter
- 1 cup buttermilk
- 3 large eggs slightly beaten
- 2 tsp. vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat oven to 350 degrees. Coat standard size donut pan with nonstick cooking spray. Set aside.
- In a large bowl whisk together flour, 1 cup sugar, baking powder, baking soda, cinnamon, and lemon zest.
- In a small saucepan melt butter over low heat. Set aside.
- In a medium bowl, whisk together buttermilk, eggs, vanilla and melted butter for 2 minutes.
- Pour egg mixture into flour mixture and mix until well combined.
- Carefully fold in blueberries. Do not over mix.
- Pour dough into gallon-sized ziploc storage bag.
- Cut a 3/4 inch whole in bottom one corner of bag.
- Pipe dough into donut molds filling 3/4 full.
- Bake for 10 minutes or until donuts spring back when touched.
- Remove from oven and let cool in pan for 5 minutes, then invert onto cooling rack.
- Dip both sides of warm donuts into extra 3/4 cup sugar.

Made these last night and they were delicious. I didn’t have a lemon on hand, so I used 2 T. of lemon juice & it worked perfectly. Doughnuts baked beautifully & were not too sweet. Will definitely be making these again. Thanks for sharing this wonderful recipe!

Would these be nice if I made with wholemeal flour?

Hi Steph. I have not tried them with wholemeal flour, but I think they may be a little bit denser. I think I would probably use 3/4 cup wholemeal flour for the one cup all-purpose flour. Thanks for the comment. Hope you enjoy them!

Stumbled upon this recipe and these are delicious! My son is going to devour them tomorrow at breakfast! I only had 1tsp vanilla left, no lemon zest and closer to 3/4 cups of sugar and they are still delicious! I can’t wait to try other recipes of yours!

Hi Aaron. I haven’t tried this with gluten-free flour, but I don’t see why it wouldn’t work. I’ve substituted gf flour for regular flour at a ratio of 1:1 in other recipes and it’s worked fine. Let me know!

Hello! So I made these last night and they came out great. The only issue I had was that when I opened my container this morning the sugar had absorb or melted. Do you know or have an idea why?

Hi Maria. After I dip the warm donuts in the sugar I let them cool before placing in a container. You can just re-dip in some sugar. They’ll be just as tasty.

DO these freeze well?

Yes, you can freeze in a Ziploc freezer bag and then take out and let come to room temp. Once at room temp I like to heat mine in the microwave for just a few seconds to warm up. Enjoy!

This recipe is not good. Dough came out like cookie dough, really think. Followed recipe exactly. Poured into a cake pan. We’ll see if that works or just waisted an hour of my time.
