Hello friends. It’s Thirsty Thursday at the beach house kitchen! It’s been crazy busy around these parts. I have been peeling, chopping, shredding, sifting, cooking, baking, styling and photographing!!! WHEW!!! Tomorrow is Friday and the weather is warming up so how’s about we have a tropical smoothie party?? It’s time to PAR-TAY like it’s your birthday! Are you in??
It was easy to channel my inner smoothie because yesterday it was like summer around here! It was BE-A-U-TI-FUL!! It was sunny and 73 degrees, so I whipped out my shades and my nice comfy beach chair, made myself this dee-li-cious Sunrise Pineapple Mango Smoothie and relaxed in the backyard with my dog, Tucker. It was the nicest day of the year so far! As I was catchin’ some rays, just a sippin’ my smoothie I was thinking of all the great things I want to make for my summer guests at the beach! It was the awesomest day ever!
During the cold, blustery days of winter I gather recipes, test out some of my own and anticipate some happy faces around my dining table all summer long! As I have mentioned before I love, love, love all the fresh fruits and vegetables I am able to get at the beautiful stands at the Jersey shore. During the summer many of my recipes revolve around the wonderful produce New Jersey has to offer. We have some of the best corn, tomatoes, blueberries and strawberries ever! After all, New Jersey isn’t called the Garden State for nothin’! So obviously smoothies are an everyday offering at my house during the summer months. It’s like smoothie heaven right smack in the middle of the Jersey shore!
Let’s face it, smoothies are SO easy to make. No rocket science involved here! Minimal chopping, no pots, pans or bowls to clean, toss it in the blender and wham bam a delicious smoothie for your drinking pleasure! So to toast the upcoming summer season I think we should celebrate with my absolutely yummy Sunrise Pineapple Mango Smoothie! It’s filled with sweet pineapple, mango, banana, a little coconut milk, orange juice and some Greek yogurt. It’s perfect any time of the day really. I love mine in the morning to get me going post-workout or as a special afternoon snack when I have had a crazy, busy day and deserve a special healthy treat. So channel you inner smoothie, break out your shades, flip flops and beach chair for the upcoming summer season and enjoy! Cheers!
- 1 cup fresh pineapple chunks
- 1 cup fresh mango chunks
- 1 banana
- 1/3 cup coconut milk
- 1/2 cup orange juice (I use Trop 50 for fewer calories)
- 1 5.3 oz. container Chobani plain Greek yogurt
- Combine first 5 ingredients in blender and blend until smooth. Add yogurt. Blend until smooth. If you want to thin out the smoothie add more orange juice.
